Directions

1.To prepare the low carb brownies, preheat your oven to 350ºF (175ºC). Line a 9×7-inch baking pan with parchment paper.

2. In a bowl mix butter and dark chocolate. Microwave for 30 seconds.

3. Combine the dry ingredients: almond flour, sweetener, dark cocoa powder, baking powder.

4. In a large mixingbowlcrack the eggs and beat with a mixer until frothy. Add vanilla extract, the butter and chocolate mixture and continue mixing.

5. Slowly mix in the dry ingredients, until you get a brownie batter consistency.

6. Transfer the brownie batter to the baking pan and bake for 15-20 minutes. You’ll want to check the low carb brownies from minute 15 to make sure you aren’t overbaking them. The center has to be slightly moist when touching. If you like it runny, a blade inserted in the center should come out with some uncooked batter. Allow to cool down, then cut into squares. Enjoy your keto brownies with almond flour warm or at room temperature!

Note: The more youbeat the eggs, the more the texture of the brownies will be fluffy and “melt-in-your-mouth” delicious.

IT came out great! Very moist, I did make a few changes. I added 1/3 cup of coconut flour, 2 more tablespoons of butter and 1 extra egg. I also added walnuts.

Wonderful! I have only been on Keto for a couple weeks now and I was starting to really crave sweets again! This was perfect! I had to bake mine a bit longer but overall, they were the best solution for brownie lovers like me on keto.

Thank you for this recipe! I have tried using my traditional recipe with erythritol instead of sugar and it just didn’t work, but this is a keeper. Mine didn’t develop a crackly top as I’d hoped, and it needed a lot more bake time, but the end result was certainly worth it.

FAQs

What makes a brownie more fudgy? ›

Fudgy brownies have a higher fat-to-flour ratio than cakey ones. So add more fat—in this case, butter and chocolate. A cakey batch has more flour and relies on baking powder for leavening. The amount of sugar and eggs does not change whether you're going fudgy or cakey.

How many carbs do keto brownies have? ›

This brownie recipe is tested with almond flour and you can not simply swap out with coconut flour. You can, however, substitute with sunflower seed flour for a nut-free version. How many carbs are in a keto brownie? For one 2-inch square, these keto brownies have only 1.2 grams of net carbs.

What is the difference between chewy and fudgy brownies? ›

Fudgy brownies are moist, dense and gooey, with almost the texture of fudge, but not quite as compact. Chewy brownies are dense (like fudgy brownies), but have a little more “bite” to them or elastic texture when you chew them.

Why are my brownies never fudgy? ›

Achieving a fudgy brownie is all to do with the ratio of fat to flour. A fudgy brownie recipe will use more fat than flour. Generally this is achieved by adding more butter or real chocolate to your brownie recipe. A cakey brownie recipe on the other hand will call for more flour in the ratio of fat to flour.

How do you keep brownies fudgy? ›

Using airtight wrappings (including using plastic wrap right against the brownies) is key to keeping your brownies fresh, whether you're keeping them at room temperature for short-term storage, or planning to freeze them so you can have a fresh brownie ready whenever you need it.

Are brownies better with butter or oil? ›

the butter brownies actually had a fudgier texture. they were softer, and they really just melted in your mouth. they also had that shiny crust and just better flavor, whereas the oil brownies were actually chewier. they were crunchier at the top and at the edges.

Are Ghirardelli brownies chewy or fudgy? ›

When you want a delicious brownie for a baking emergency—or just to treat yourself—look no further than a box of Ghirardelli Double Chocolate Brownies. These fudgy brownies were packed with that Ghirardelli chocolate flavor that so many of us love.

How do I know when my fudgy brownies are done? ›

To test for doneness with a toothpick, insert a toothpick into the center of the brownies and pull it back out. For fudgy brownies, you'll want to see some moist crumbs attached to the toothpick when you pull it back out. If it looks like it's covered in brownie batter, the brownies will need to bake a bit longer.

What happens if you put too many eggs in brownies? ›

They give brownies a lighter, drier, and more cake-like texture. If you prefer this over the chewy variety, then go ahead and crack in that additional egg. On the other hand, too many eggs will yield brownies that are hard, heavy, and tough.

Why is my brownie still gooey in the middle? ›

Problem 2: My brownies are too GOOEY

Honestly, there is a slim chance they are underbaked, but it's more likely that they just need to firm up in the fridge. Our brownies are basically a chocolaty puddle when they come out the oven.

What if I add too much flour to brownies? ›

If you add too much flour, your brownies will likely come out too dry and taste stale. If you're following a recipe to a T and your brownies still taste too dry, you may be overpacking the flour during the measuring process.

How to make brownie mix more chewy? ›

The path to brownies with a fudgy, chewy center — so dense their crumb becomes fine enough to almost (but not quite) disappear — is the combination of melted butter and sugar. Cookbook author Jesse Szewczyk details the science behind using melted (rather than solid) butter in cookies in the secret to fudgier cookies.

Why do my brownies always turn out gooey? ›

Problem 2: My brownies are too GOOEY

If you think about it, the ingredients that create that fudgy texture - the chocolate and butter - are completely liquid when hot, but solid at room temperature. We would never attempt to slice a brownie less than 2-3 hours after baking - it'll be a gooey mess.

What consistency should fudgy brownie batter be? ›

The ideal consistency of brownie mix is thick and gooey, similar to a thick cake batter. When you mix the ingredients together, the batter should be smooth and free of lumps, with a slightly sticky texture. This consistency is important for achieving moist and fudgy brownies that are rich in flavor.
